Big Mac Casserole



  • 1 lb. ground beef
  • 1 can refrigerated biscuits
  • 2 cups grated mild cheddar cheese
  • salt & pepper to taste

Homemade Special Sauce:

  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 Tbsp. minced onion
  • 4 Tbsp. minced bread & butter pickles
  • 1 tsp. Worcestershire sauce
  • 1 tsp. sugar


  • 1 cup shredded lettuce
  • dill pickles, chopped


  1. Preheat oven to 350*.
  2. In a medium bowl, combine the ingredients for special sauce & set aside.
  3. In a medium skillet on medium heat, brown the ground beef. Drain grease & add back to skillet. Salt & pepper to taste.
  4. Spread beef into an 8×8 baking dish.
  5. Slice refrigerated biscuits in half so you have 10 equal round halves.
  6. Sprinkle cheese over the ground beef.
  7. Top with biscuit halves.
  8. Place casserole in the oven & bake until biscuits are done (about 30 minutes).
  9. Garnish casserole with lettuce & pickles. Spoon special sauce over top & serve.

Cheesy Pepperoni Pizza Sticks


  • 1 tube Pillsbury Pizza Crust
  • Pepperoni slices
  • 10 mozzarella cheese sticks
  • 2 Tbsp. melted butter
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried parsley
  • Optional: marinara sauce and/or ranch dressing for dipping


  1. Preheat oven to 450*.
  2. Spread dough out on a lightly greased baking sheet. Cut the dough into 10 equal size rectangles.
  3. Arrange desired amount of pepperoni slices on each rectangle & top with mozzarella cheese stick.
  4. Roll up the dough, pinching the seams closed.
  5. Combine melted butter, garlic powder & parsley in a small bowl. Brush the pizza sticks with the butter mix.
  6. Bake for 10-12 minutes, or until golden brown.
  7. Enjoy warm with a side of marinara or ranch.

Holy crap did this book bring back some painful memories.
With a history of being a victim of domestic violence, Clare Mackintosh sucked me in big time. Mackintosh floods you with the gripping emotions of what it’s like to feel a complete loss of control over yourself & your own freedom.
The twist in this book is so intense, I wasn’t able to put it down.
This intense story really calls into question whether or not you can truly escape your past.
I highly, highly recommended!

Anywho, The Grown Up By Gillian Flynn


was a perfect little FREE gift included in one of my monthly boxes. Gillian Flynn is the Chicago author who wrote Gone Girl. She’s brilliant. The Grownup is a short, 62 pages. But, guys, this book was awesome!

Like, what?
I literally caught myself nervously glancing around the lunchroom paranoid that someone would see what I was reading & be like… “what is this girl into?”
Many twists & turns later, I closed the book. My feelings on Gillian Flynn completely solidified. She’s a master at giving you emotional whiplash.
